  2. Add the tomatoes, vegetable stock, salt, and black pepper. Bring to a boil and then reduce heat to low. Simmer for 20 minutes.
  3. Remove the pot from heat and let it cool slightly.
  4. Use an immersion blender or transfer the mixture to a blender and blend until smooth.
  5. Return the soup to the pot and stir in the cognac and fresh basil.
  6. Place the pot back on the stove over low heat. Stir in the heavy cream and cook for an additional 5 minutes, stirring occasionally.
  7. Serve hot and garnish with fresh basil leaves.
