  1. Drain and press tofu to remove excess moisture.
  2. Crush the black peppercorns using a mortar and pestle.
  3. Cut tofu into 1-inch thick slices.
  4. Heat olive oil in a pan over medium heat.
  5. Add tofu slices to the pan and cook until golden brown on both sides.
  6. Remove tofu from the pan and set aside.
  7. In the same pan, add vegetable broth and bring to a simmer.
  8. Add crushed black peppercorns and cook for 2 minutes.
  9. Stir in heavy cream and salt, and cook for another 2 minutes.
  10. Return tofu to the pan and cook for an additional 2 minutes.
  11. Remove from heat and let it rest for 5 minutes.
  12. Serve tofu au poivre topped with chopped chives.
