Three Cheese Broccoli Soup

In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.

Sprinkle the flour over the onion and garlic mixture, and stir well to combine. Cook for another minute.

Slowly pour in the vegetable broth while stirring continuously. Bring the mixture to a boil.

Add the broccoli florets and simmer for about 10 minutes, or until the broccoli is tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the milk, cheddar cheese, gouda cheese, and parmesan cheese. Heat over low heat until the cheese is melted and the soup is heated through.

Season with salt and black pepper to taste.
