Sweet Potato Mont Blanc
Mont Blanc is a popular dessert in France, especially during the autumn season. It is named after the highest mountain in the Alps, Mont Blanc, due to its resemblance to the snow-capped peak.

Preheat the oven to 180°C (350°F).

Wash and peel the sweet potatoes. Cut them into small pieces and boil until tender.

In a separate pot, boil the chestnuts until soft. Peel and mash them.

In a mixing bowl, combine the boiled sweet potatoes, mashed chestnuts, sugar, and vanilla extract. Mash and mix until smooth.

In a separate bowl, whip the whipping cream until stiff peaks form.

Gently fold the whipped cream into the sweet potato and chestnut mixture.

Transfer the mixture into a piping bag fitted with a large star nozzle.

Pipe the mixture onto individual serving plates in a mont blanc shape.

In a small saucepan, melt the butter over low heat. Add the flour and cook for 1-2 minutes, stirring constantly.

Gradually add the milk, stirring constantly, until a thick custard forms.

Remove from heat and let the custard cool.

Once cooled, place the custard in a piping bag fitted with a small round nozzle.

Pipe the custard onto the sweet potato mont blanc.

Sprinkle powdered sugar on top.

Bake in the preheated oven for 10-15 minutes, until the sugar caramelizes.
