Thin Mint-Chocolate Cupcakes
Thin Mint cookies are one of the most popular Girl Scout cookies in the United States.
This is vegetarian recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 18.

Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Fold in the crushed Thin Mint cookies.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

In the meantime, prepare the frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until well combined. Stir in the milk, peppermint extract, and green food coloring (if using).

Once the cupcakes are completely cooled, frost them with the prepared frosting. Garnish with additional Thin Mint cookies.
