  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the butternut squash into small cubes.
  3. Core and slice the apples.
  4. Thinly slice the red onion.
  5. In a large bowl, toss the butternut squash, apples, and red onion with olive oil, maple syrup, thyme, salt, and black pepper.
  6. Spread the mixture on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the squash is tender and lightly browned.
  7. While the vegetables are roasting, toast the pecans in a dry skillet over medium heat until fragrant.
  8. Once the vegetables are done, remove them from the oven and let them rest for 10 minutes.
  9. In a serving dish, arrange a bed of mixed greens.
  10. Top with the roasted vegetables and sprinkle with toasted pecans and crumbled goat cheese.
  11. Serve warm and enjoy!
