Thai Pineapple-Peanut Fried Rice

Heat vegetable oil in a large skillet or wok over medium heat.

Add garlic, ginger, and onion, and cook until fragrant.

Push the vegetables to one side of the skillet and add beaten eggs on the other side. Scramble the eggs until cooked through.

Add carrots, peas, and red bell pepper to the skillet. Cook until the vegetables are tender.

Stir in cooked rice, pineapple chunks, peanuts, soy sauce, fish sauce (optional), and lime juice. Mix well.

Cook for a few minutes until everything is heated through.

Remove from heat and let it rest for 5 minutes.

Garnish with chopped green onions and cilantro.
