  1. In a large pot, bring vegetable broth to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. In a separate pan, heat cooking oil over medium heat. Add Thai green curry paste and cook for 1 minute.
  3. Add mixed vegetables and tofu to the pan. Stir-fry for 5 minutes or until vegetables are tender.
  4. Pour coconut milk into the pan and bring to a simmer. Cook for another 5 minutes.
  5. Fluff the couscous with a fork and add it to the pan. Stir well to combine.
  6. Add lime juice and salt. Cook for an additional 2 minutes.
  7. Remove from heat and garnish with fresh cilantro.
  8. Serve hot and enjoy!
