Preheat the oven to 375°F (190°C).

Cut the dumpling squash in half and scoop out the seeds.

In a small bowl, mix together the tangerine juice, tangerine zest, olive oil, maple syrup, salt, and black pepper.

Brush the mixture over the cut sides of the squash.

Place the squash halves, cut side up, on a baking sheet.

Sprinkle the pine nuts over the squash.

Place a sprig of fresh thyme on each squash half.

Bake for 40-45 minutes, or until the squash is tender.

Remove from the oven and let rest for 10 minutes.
