Heat butter and olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized, about 30 minutes.

Sprinkle flour over onions and stir to coat. Cook for 2 minutes.

Pour in beef broth, white wine, bay leaf, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

Ladle soup into oven-safe bowls. Top each bowl with a slice of French bread and sprinkle with Gruyere and Parmesan cheese.
