  2. Roll out the pie crust and cut it into heart shapes using a cookie cutter.
  3. Press the heart-shaped crusts into a muffin tin.
  4. In a saucepan, combine the strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens.
  5. Spoon the strawberry filling into the pie crusts.
  6. Bake for 15-20 minutes, until the crust is golden brown.
  7. Allow the tarts to cool for 10 minutes, then remove them from the muffin tin.
  8. Serve the tarts with whipped cream and garnish with mint leaves.
