  1. Preheat the oven to 180°C (350°F).
  2. Peel and dice the sweet potatoes, then boil them until tender. Drain and mash the sweet potatoes.
  3. In a large bowl, combine the mashed sweet potatoes, flour, butter, sugar, egg, vanilla extract, cinnamon, salt, and milk. Mix until well combined.
  4. Roll out the dough on a floured surface and cut out circles to fit into a greased tart pan. Press the dough into the pan and trim any excess.
  5. Bake the tart shells in the preheated oven for 10-12 minutes, or until lightly golden.
  6. Remove from the oven and let the tart shells cool completely.
  7. Once cooled, fill each tart shell with whipped cream and drizzle with caramel sauce.
  8. Serve the sweet potato tarts chilled and enjoy!
