Peel and dice the sweet potatoes, then boil them until tender. Drain and mash the sweet potatoes.

In a large bowl, combine the mashed sweet potatoes, flour, butter, sugar, egg, vanilla extract, cinnamon, salt, and milk. Mix until well combined.

Roll out the dough on a floured surface and cut out circles to fit into a greased tart pan. Press the dough into the pan and trim any excess.

Bake the tart shells in the preheated oven for 10-12 minutes, or until lightly golden.
