Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

Peel and cook the sweet potatoes until tender. Mash and set aside to cool.

In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the vanilla extract and mashed sweet potatoes.

Gradually add the dry ingredients to the sweet potato mixture, alternating with the milk, beginning and ending with the dry ingredients.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and allow the cake to cool in the pan for 15 minutes. Then, transfer the cake to a wire rack to cool completely.

Once cooled, slice and serve.
