Peel and grate the sweet potatoes.

In a large bowl, mix the grated sweet potatoes, flour, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the milk and egg.

Pour the milk and egg mixture into the sweet potato mixture and stir until well combined.

Heat a large skillet or griddle over medium heat and melt a tablespoon of butter.

Scoop 1/4 cup of the sweet potato batter onto the skillet and spread it into a round shape.

Cook for 2-3 minutes on each side, until golden brown.
