Sweet Potato-Corn Chowder
Sweet potatoes are an excellent source of vitamin A and a good source of vitamin C, fiber, and potassium.

Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté for 5 minutes.

Add the sweet potatoes, corn kernels, vegetable broth, salt, pepper, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until the sweet potatoes are tender.

Use an immersion blender to blend the soup until smooth.

Stir in the milk and cook for another 5 minutes.

Serve hot, garnished with fresh parsley and scallions.
