  1. Peel and chop the sweet potatoes, onion, and garlic.
  2. In a large pot, melt butter over medium heat. Add onion and garlic, sauté until softened.
  3. Add sweet potatoes, vegetable broth, salt, pepper, and paprika to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes or until sweet potatoes are tender.
  4. In a separate small pot, melt butter over medium heat. Stir in flour to make a roux. Cook for 1-2 minutes.
  5. Slowly whisk in milk, stirring constantly until smooth and thickened.
  6. Pour the milk mixture into the pot with the sweet potatoes. Stir well to combine.
  7. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  8. Return the soup to the pot and heat over low heat until warmed through.
  9. Serve the sweet potato chowder hot, garnished with cheddar cheese and green onions.
