Peel and chop the sweet potatoes, onion, and garlic cloves.

In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the sweet potatoes, vegetable stock, chili powder, ground cumin, paprika, salt, and black pepper to the pot.

Bring to a boil and then reduce heat. Simmer until the sweet potatoes are tender.

Use an immersion blender to blend the soup until smooth.

Stir in the coconut milk, fresh cilantro, and lime juice.

Simmer for another 5 minutes.

Serve hot and garnish with additional cilantro if desired.
