  2. Boil the sweet potatoes until tender. Peel and mash them.
  3. In a separate bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the mashed sweet potatoes and mix well.
  5. Beat in the eggs, one at a time, until fully incorporated.
  6. Pour the mixture over the crust in the springform pan.
