Preheat the oven to 350°F (175°C).

Boil the sweet potatoes until tender. Peel and mash them.

In a separate bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.

In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the mashed sweet potatoes and mix well.

Beat in the eggs, one at a time, until fully incorporated.

Pour the mixture over the crust in the springform pan.

In a small bowl, mix together the pecans and brown sugar. Sprinkle the mixture over the top of the cheesecake.

Bake for 50-60 minutes or until the center is set.

Allow the cheesecake to cool in the pan for 10 minutes, then remove the sides of the pan.
