  1. In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. In a separate small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until frothy.
  3. Add the yeast mixture, egg yolks, and vanilla extract to the flour mixture. Stir until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic.
  5. Place the dough in a greased bowl and cover with a damp cloth. Let it rise in a warm place for 1 hour, or until doubled in size.
  6. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a baking sheet.
  7. Make an indentation in the center of each dough ball and fill it with fruit preserves.
  8. Cover the dough balls with a damp cloth and let them rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C). Bake the kolaches for 15-20 minutes, or until golden brown.
