  1. Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking dish with parchment paper.
  2. In a food processor, combine the all-purpose flour, powdered sugar, and salt for the crust. Add in the cold cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Press the crust mixture into the prepared baking dish. Bake for 15-17 minutes, or until lightly golden. Remove from the oven and set aside.
  4. In a large bowl, whisk together the granulated sugar, all-purpose flour, baking powder, and salt for the lemon filling. Add in the lemon zest, lemon juice, and eggs. Whisk until well combined.
  5. Pour the lemon filling over the baked crust. Return the dish to the oven and bake for another 20-22 minutes, or until the filling is set and the edges are lightly golden.
  6. Remove from the oven and let cool in the baking dish for about 2 hours. Once cooled, dust with powdered sugar.
