Carrot and Cauliflower Casserole
Carrots and cauliflower are both excellent sources of vitamins and minerals, making this casserole a nutritious and delicious choice for a vegetarian meal.

Preheat the oven to 375°F (190°C).

Peel and slice the carrots. Cut the cauliflower into florets.

In a large pot, bring water to boil and cook the carrots and cauliflower until tender. Drain and set aside.

In a skillet, heat olive oil and sauté the onion and garlic until translucent.

In a large bowl, combine the cooked carrots, cauliflower, sautéed onion, garlic, milk, cheddar cheese, salt, black pepper, and dried thyme. Mix well.

Transfer the mixture to a greased casserole dish.

Sprinkle bread crumbs on top.

Bake in the preheated oven for 30 minutes or until golden brown.

Let it rest for 10 minutes before serving.
