Oatmeal cookies were first made in Scotland and were originally called ‘oat cakes’. They were a staple of the Scottish diet and were often eaten as a main course.

Preheat the oven to 350°F (175°C).

In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.

Beat in the egg and vanilla extract.

In a separate bowl, combine the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing well.

Stir in the oats, chocolate chips, and chopped nuts (if using).

Drop rounded tablespoons of dough onto ungreased baking sheets.

Bake for 10-12 minutes, or until lightly golden brown.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
