Heat olive oil in a large skillet over medium heat.

Add diced potatoes and cook until golden brown and crispy, about 10 minutes.

Add diced onion, bell peppers, and spinach to the skillet. Cook until vegetables are tender, about 5 minutes.

In a separate bowl, whisk together eggs, salt, and pepper.

Pour the egg mixture over the cooked vegetables in the skillet. Stir gently to combine.

Cook the mixture, stirring occasionally, until the eggs are set, about 5 minutes.

Sprinkle cheddar cheese on top and cover the skillet for 1 minute to melt the cheese.
