  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, vanilla extract, and lemon juice until smooth and creamy.
  4. In a separate mixing bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until well combined.
  6. Pour the cheesecake batter over the crust in the springform pan. Smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and leave the cheesecake in the oven for 1 hour to cool gradually.
  9. Remove the cheesecake from the oven and let it cool completely at room temperature.
  10. Once cooled, refrigerate the cheesecake for at least 2 hours, or overnight, to set.
  11. Before serving, top the cheesecake with fresh berries. Enjoy!
