Stuffed tomatoes with brown rice

Preheat the oven to 180°C (350°F).

Cut off the tops of the tomatoes and scoop out the pulp and seeds.

In a saucepan, cook the brown rice according to the package instructions.

In a separate pan, sauté the onion and garlic in olive oil until translucent.

Add the spinach and cook until wilted.

In a bowl, mix the cooked rice, sautéed vegetables, feta cheese, salt, black pepper, and fresh parsley.

Stuff the mixture into the hollowed-out tomatoes.

Place the stuffed tomatoes in a baking dish and bake for 30-35 minutes.

Remove from the oven and let them rest for 10 minutes before serving.
