Preheat the oven to 375°F (190°C).

Remove the stems from the mushrooms and chop them finely. Set the mushroom caps aside.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems and garlic. Cook until the mushrooms release their liquid and the garlic is fragrant, about 5 minutes.

In a bowl, combine the cooked mushroom stems and garlic with the sun-dried tomatoes, goat cheese, breadcrumbs, parsley, salt, and black pepper. Mix well.

Stuff each mushroom cap with the filling mixture and place them on a baking sheet. Drizzle with the remaining olive oil.

Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.

Remove from the oven and let them rest for 5 minutes before serving.
