  3. Finely chop the leeks, garlic, and parsley.

  6. In a bowl, crumble the blue cheese and mix in the sautéed leeks, garlic, and mushroom stems.
  7. Season with salt and black pepper.
  8. Stuff the mushroom caps with the cheese and leek mixture.
  9. Place the stuffed mushrooms on a baking sheet and sprinkle with chopped walnuts.
  10. Bake in the preheated oven for 15-20 minutes, until the mushrooms are tender and the cheese is melted.
  11. Remove from the oven and let rest for 5 minutes before serving.
