  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture onto the bottom of a greased 9-inch springform pan.
  3. In a separate mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 50-60 minutes, or until the center is set and the top is lightly browned.
  6. Remove from the oven and let it cool in the pan for 10 minutes.
  7. Run a knife around the edge of the pan to loosen the cheesecake.
  8. Remove the sides of the springform pan and let the cheesecake cool completely.
  9. Once cooled, spread strawberry preserves over the top of the cheesecake.
  10. Garnish with fresh strawberries.
  11. Refrigerate for at least 2 hours before serving.
