Strawberry Lime Cheesecake

Preheat the oven to 325°F (163°C).

In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.

In a large mixing bowl, beat the cream cheese and sugar until smooth. Add in the sour cream, lime juice, and vanilla extract, and mix until well combined.

Add the eggs, one at a time, beating well after each addition.

Pour the cream cheese mixture over the crust in the springform pan.

Bake for 55-60 minutes, or until the center is set and the top is lightly browned.

Remove from the oven and let it cool in the pan for 10 minutes.

Run a knife around the edges to loosen the cheesecake, then remove the sides of the springform pan.

Let the cheesecake cool completely, then refrigerate for at least 3 hours, or overnight.

Before serving, top the cheesecake with sliced strawberries, whipped cream, and lime zest. Enjoy!
