Strawberry Cream Cookies
Strawberries are not actually berries, but rather an aggregate fruit!

Preheat the oven to 350°F (175°C).

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Gently fold in the diced strawberries.

Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

In a chilled bowl, whip the heavy cream until soft peaks form.

Gradually add the powdered sugar and continue to whip until stiff peaks form.

Spread a dollop of the whipped cream onto the flat side of one cookie, then sandwich it with another cookie.
