In a food processor, combine flour, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.

In a small bowl, whisk together egg yolks and ice water. Gradually add the egg mixture to the food processor while pulsing, until the dough comes together.

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 1 hour.

Preheat the oven to 375°F (190°C).

On a lightly floured surface, roll out the dough into a circle and transfer it to a tart pan.

In a bowl, toss together sliced stone fruits, cornstarch, lemon juice, and vanilla extract.
