Stone Fruit Cobbler
Cobblers are a traditional American dessert that originated in the early British American colonies. They were originally made with a simple biscuit dough topping, which resembled cobblestones, hence the name ‘cobbler’.

Preheat the oven to 375°F (190°C).

In a large bowl, combine the stone fruits, lemon juice, granulated sugar, and cornstarch. Toss until the fruits are evenly coated.

Transfer the fruit mixture to a baking dish.

In a separate bowl, combine the flour, granulated sugar, baking powder, salt, and ground cinnamon.

Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to incorporate the butter until the mixture resembles coarse crumbs.

Add the milk and vanilla extract to the flour mixture and stir until just combined.

Drop spoonfuls of the batter on top of the fruit mixture.

Bake for 40-45 minutes, or until the topping is golden brown and the fruit is bubbling.

Remove from the oven and let it rest for 10 minutes before serving.
