  1. Crush the digestive biscuits and mix with melted butter. Press the mixture into the base of a springform cake tin.
  2. In a separate bowl, beat the cream cheese and caster sugar until smooth. Add the double cream and vanilla extract, and continue beating until well combined.
  3. Pour half of the cream cheese mixture over the biscuit base.
  4. Cut the sticky toffee pudding slices into smaller pieces and arrange them on top of the cream cheese mixture.
  5. Pour the remaining cream cheese mixture over the toffee pudding.
  6. Drizzle the toffee sauce over the top.
  7. Bake in a preheated oven at 180°C for 50-60 minutes.
  8. Once cooked, remove from the oven and let it cool for 2 hours.
  9. Refrigerate for at least 2 hours before serving.
  10. Serve chilled and enjoy!
