Preheat the oven to 325°F (163°C) and line a 9x9-inch (23x23cm) baking pan with parchment paper.

In a medium bowl, combine the chocolate graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.

In a large mixing bowl, beat the cream cheese, sugar, vanilla extract, peppermint extract, and green food coloring until smooth.

Add the eggs, one at a time, beating well after each addition. Stir in the chocolate chips.

Pour the cream cheese mixture over the crust in the pan and smooth the top.

Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.

Remove from the oven and let cool in the pan for 1 hour.

Refrigerate for at least 2 hours, or until completely chilled.

Once chilled, remove from the pan and cut into bars.

In a small saucepan, heat the heavy cream until steaming. Pour over the bars and sprinkle with crushed peppermint candies.
