Finely chop the cabbage, carrots, mushrooms, spring onions, garlic, and ginger.

Heat 1 tablespoon of vegetable oil in a pan and sauté the garlic and ginger until fragrant.

Add the cabbage, carrots, mushrooms, and bean sprouts to the pan and stir-fry for 2-3 minutes.

Season with soy sauce and sesame oil, and cook for another minute.

Dissolve cornstarch in a small amount of water and add it to the pan to thicken the filling.

Remove the pan from the heat and let the filling cool.

Take a spring roll wrapper and place a spoonful of filling in the center.

Fold the sides of the wrapper over the filling and roll it up tightly.

Heat the remaining vegetable oil in a deep pan or fryer.
