Spinach & Mushroom Crepes
Crepes originated in Brittany, a region in the northwest of France, and have been enjoyed for centuries.
This is vegetarian and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

In a pan, heat olive oil and sauté the chopped onion and garlic until golden.

Add the sliced mushrooms and cook until they release their moisture.

Add the spinach and cook until wilted.

Season with salt and black pepper.

In a separate bowl, whisk together the milk, flour, and eggs to make the crepe batter.

Heat a non-stick pan and pour a ladleful of batter to make a thin crepe.

Cook until the edges start to brown, then flip and cook the other side.

Repeat with the remaining batter.

Fill each crepe with the spinach and mushroom mixture.

Optional: sprinkle grated cheese on top.

Roll up the crepes and serve hot.
