Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until onion becomes translucent.

Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 10 minutes.

Remove from heat and let it cool slightly. Blend the soup until smooth using a blender or immersion blender.
