  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a saucepan, cook the quinoa according to package instructions.
  3. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and jalapeno pepper. Cook until softened.
  4. Add cooked quinoa, black beans, corn, cumin, chili powder, paprika, salt, and pepper to the skillet. Stir well to combine.
  5. Stuff the bell peppers with the quinoa mixture and place them in a baking dish. Top with cheddar cheese.
  6. Bake for 25-30 minutes or until the peppers are tender and the cheese is melted and golden.
