Cook the spaghetti noodles according to the package instructions. Drain and set aside.

In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and ginger, and cook for 1-2 minutes until fragrant.

Add the sliced bell pepper, carrot, and broccoli florets to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

In a small bowl, whisk together the soy sauce, peanut butter, and crushed red pepper flakes. Pour the sauce over the vegetables in the skillet.

Add the cooked spaghetti noodles to the skillet and toss everything together until well coated in the sauce.

Cook for an additional 2-3 minutes, stirring constantly, until the noodles are heated through.

Remove from heat and garnish with chopped roasted peanuts, sliced green onions, and a squeeze of fresh lime juice.
