Spicy Carrot Cupcakes
Carrots were originally purple and yellow, not orange!

Preheat the oven to 180°C (350°F). Grate the carrots.

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, and salt.

In a separate bowl, beat the eggs. Add the vegetable oil and grated carrots, and mix well.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Spoon the batter into cupcake liners, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cupcakes to cool completely.

In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.

Frost the cooled cupcakes with the cream cheese frosting.
