In a separate bowl, whisk together the pumpkin puree, egg, milk, and vanilla extract.

Heat vegetable oil in a deep pan or fryer to 350°F (175°C).

Drop spoonfuls of the doughnut batter into the hot oil and fry until golden brown, flipping once.
