  2. Cut the pumpkin into cubes and remove the seeds.
  3. In a large bowl, toss the pumpkin cubes with olive oil, cinnamon, ginger, nutmeg, salt, and black pepper.
  4. Spread the pumpkin cubes on a baking sheet and roast for 30-35 minutes, or until tender.
  5. Meanwhile, heat olive oil in a pan over medium heat.
  6. Add chopped onion and minced garlic to the pan and sauté until golden brown.
  7. Once the pumpkin is done roasting, transfer it to the pan with onions and garlic.
  8. Add maple syrup and mix well.
  9. Cook for an additional 5 minutes, stirring occasionally.
