Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the peaches, blueberries, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Mix well and set aside.

In a separate bowl, whisk together the flour, remaining sugar, baking powder, and remaining salt. Cut in the butter until the mixture resembles coarse crumbs.

Stir in the milk and vanilla extract until just combined.

Heat a cast iron skillet over medium heat and melt 2 tablespoons of butter. Add the fruit mixture to the skillet and cook for 5 minutes, stirring occasionally.

Drop spoonfuls of the batter over the fruit mixture in the skillet.

Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the cobbler topping is golden brown.

Remove from the oven and let it rest for 10 minutes before serving.

Serve warm with a scoop of vanilla ice cream, if desired.
