  1. Preheat the oven to 325°F (163°C). Grease a 9-inch (23cm) springform pan.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the pumpkin puree, eggs, vanilla extract, cinnamon, ginger, nutmeg, and cloves. Mix until well combined.
  4. Pour the filling over the crust in the pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set. Remove from the oven and let cool in the pan for 10 minutes.
  6. Run a knife around the edges of the pan to loosen the cheesecake. Remove the sides of the springform pan and let the cheesecake cool completely.
  7. Refrigerate for at least 2 hours or overnight.
  8. Serve chilled with whipped cream and a sprinkle of ground cinnamon on top.
