  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the plums, sugar, flour, cinnamon, nutmeg, salt, and lemon juice.
  3. Roll out the pie crust and line a pie dish with it.
  4. Pour the plum mixture into the pie crust.
  5. Dot the top of the pie with butter.
  6. Cover the pie with the remaining pie crust and seal the edges.
  7. Brush the top crust with beaten egg.
  8. Cut slits in the top crust to allow steam to escape.
  9. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Remove from the oven and let it rest for 30 minutes before serving.
