In a bowl, whisk together the all-purpose flour, baking powder, and salt for the cookies.

In a separate large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough into two equal portions, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out one portion of the dough on a lightly floured surface to about 1/4 inch thickness.

Use a round cookie cutter to cut out cookies and place them on the prepared baking sheet.

Repeat with the second portion of dough.

Bake the cookies for 12-15 minutes or until the edges are lightly golden.

In a mixing bowl, combine the cooked and mashed sweet potato, ground cinnamon, ground nutmeg, brown sugar, and milk for the filling.

Spread a spoonful of the sweet potato filling onto the bottom side of one cookie and sandwich it with another cookie.
