In a small bowl, whisk egg yolk with ice water.

With the food processor running, slowly pour in the egg yolk mixture until the dough comes together.

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C).

Roll out the dough on a lightly floured surface to fit a pie dish.

Press the dough into the dish and trim any excess.
