In a saucepan, combine the apple cider, ground cinnamon, ground ginger, and ground nutmeg. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and stir in the lemon juice and honey.

Pour the mixture into a shallow dish and let it cool to room temperature. Place in the freezer for 1 hour.

After 1 hour, remove the dish from the freezer and use a fork to scrape the mixture, breaking up any ice crystals. Return to the freezer for another hour.

Repeat the scraping process every hour for the next 2 hours, until the mixture is completely frozen and has a granita-like texture.

In a separate bowl, whip the whipping cream, powdered sugar, and fresh ginger until soft peaks form.

Serve the spiced apple-cider granita in individual bowls or glasses, topped with a dollop of ginger whipped cream. Garnish with apple slices and cinnamon sticks, if desired.
