Preheat the oven to 350°F (175°C).

In a mixing bowl, combine low-fat milk, soy milk, eggs, sugar, vanilla extract, all-purpose flour, cornstarch, and salt. Whisk until well combined.

In a separate bowl, mix graham cracker crumbs and melted unsalted butter. Press the mixture into the bottom of a tart pan to form the crust.

Pour the milk mixture into the tart pan over the crust.

Bake in the preheated oven for 30 minutes, or until the edges are set and the center is slightly jiggly.

Remove from the oven and let it rest for 10 minutes.
