  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sour cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and salt. Mix well.
  3. In a separate bowl, combine the all-purpose flour and unsalted butter. Use your fingers to mix until the mixture resembles coarse crumbs.
  4. Add the cold water to the flour mixture and mix until a dough forms.
  5. Divide the dough in half and roll out one half to fit the bottom of a pie dish.
  6. Pour the cherry filling into the pie dish.
  7. Roll out the remaining dough and place it on top of the cherry filling.
  8. Seal the edges of the pie and cut slits in the top crust to allow steam to escape.
  9. Brush the top crust with the beaten egg and sprinkle with turbinado sugar.
